Doughnuts
I spent much of the first two quarters of 2018 developing a base recipe for doughnut, and I ended up at around 25 - 30 iterations before I was happy.
Not only did I explore creating a great dough recipe (heavily subjective, I know!), I looked at how to dress them too.
In this picture I tried a classic icing glaze. A true classic that just works.
I also looked at types of fillings too. Ones that focused on flavour rather than cloying sweetness, and nostalgia.
In the end, I found the doughnuts didn’t hold for more than 6 - 12 hours, and I decided to shelf the idea.
